Well, let's see. If we keep it to just Anime..
Bleach is creative most of the time.
Ghost in the Shell is extremely original. I don't think i've seen it's
general concepts done anywhere else, even in anime. Cyberpunk aside.
If we step outside the realm of Anime..
Homestarrunner. Arguable whether it's a cartoon, but I consider it an
internet cartoon.
Then you have some of the oldies, like the Toxic Avenger. Inspired by
Captain Planet, it is however a rather original take on it. Deformed
superheroes, I love.
Insulin Man is also >fucking original<. A diabetic superhero who, aside
from being diabetic, is a serious superhero. Not just some awful
educational awareness thing, he was presented in a serious manner. Just
that his super-weakness was rather unusual for a superhero, and rather
common for a 'norm'. That and he wasn't over the top or 'badass' like most.

I like things inspired. Especially those that take new spins on old ideas,
or touch on subjects noone else has (or will.) Kind of like how Spawn once
was.
Or Preacher.
I just have an attraction to the extreme outliers.
