But do they burn? Being a creature of the desert they would've adapted to the environment. The ears are used to cool themselves and regulate their body temp hence the large surface area. They would seek shade or shelter if the temp got too hot. Their being nocturnal may also mean the prey they hunt is also nocturnal as well. If nothing else what about the rabits and hares or the desert areas who also have large ears as well don't seem to have this problem you speak of.
